Wild Moon Cottage is a small working homestead in the pristine Ozark Mountains. We have dairy goats, poultry, organic herb and vegetable gardens, a start of a tiny fruit orchard, several black walnut trees, wild berries and fields of wildcrafting goodness. We raise our own milk, our own eggs, much of our own medicine and food. I do laundry by hand, make my own vinegar, candles, soap, bread, cheese ........ For a living I am an artist and herbalist. My goal for myself and our homestead is to be as self sufficient and self sustaining as possible.

Each day is more exciting then the next. I don't know why just being alive is such a good thing to me now. As a kid I dreaded most days, now I look forwarded to them with an almost greedy lust.

Yesterday we got the 4x4 and more screws to finish the henhouse. I also got some more screen to repair a damaged one for our other big window.

I made chicken pot pie with leftover chicken I had frozen from the Sunday chicken two weeks ago. Pot pie is what I make to use up leftovers, when we have a chicken or turkey I pick off most of what's left and then boil the bones. From one smallish chicken I generally get 10 cups of broth. I store it in 1 and 2 cup servings in the freezer and use it for all kinds of things. For the chicken potpie I make a thick chicken soup or gravy with about 2 cups and a little milk added. If we have left over mashed or baked potatoes I add them to the soup mix. Any other kind I cut up and add to the vegetables. It's actually very good.

We've been getting a few eggs a day now and soon we should be back to selling eggs. With this many hens we'll have more then enough. We've sold eggs for years but just to a few neighbors. If these hens lay consistently we'll put a sign out this year :) I plan on putting a light in the new henhouse and I may even leave it on a few hours each day this winter. I don't usually do that because I think the chickens are healthy if allowed to fallow their own senses and nature. If they slow down or stop in winter then it gives their bodies a rest and they lay eggs much longer. At least that's my theory :) Hen is very old and only stopped laying completely in the last few months.

7:30am and back in from morning chores. I've finished a 3rd and 4th set of cat toys this morning and shortly we'll be getting around to hopefully go pick some walnuts down the road a little ways.

What a content time you are having. Your pot pie sounds yummy. I usually look forward to each day but guess I am in a depressing rut as I dread each day lately and seemed to just have energy to do what I have to do to get thru the day. I am sure it will get better just have to deal with it for the time being. Have a super fun weekend!

We eat more soup so most of my leftovers are used in vegetable soup rather than chicken pot pie. Your pot pie has my tummy rumblin.

Love the toys, again!

And I love chicken pot pie too. I really need to start getting into making a big meal and being able to save leftovers for other things, like making whole chickens. I made a big pot of chili just now to last a few days, so I suppose that's a start.

You sound wonderfully busy and happy! Yay for the chicken house!
