Wild Moon Cottage is a small working homestead in the pristine Ozark Mountains. We have dairy goats, poultry, organic herb and vegetable gardens, a start of a tiny fruit orchard, several black walnut trees, wild berries and fields of wildcrafting goodness. We raise our own milk, our own eggs, much of our own medicine and food. I do laundry by hand, make my own vinegar, candles, soap, bread, cheese ........ For a living I am an artist and herbalist. My goal for myself and our homestead is to be as self sufficient and self sustaining as possible.

Corn Pones

2 c cornmeal
1 egg
1 1/4 c milk (approximately)
6 T sugar

Put cornmeal, sugar and egg in a bowl, then add milk slowly till you get the right consistency (cornbread batter). Spoon into well greased pone pans (or any baking pan) and bake at 400 deg for about 15 minutes, until golden.

You can adjust the sugar to taste, we like sweet pones. Especially with milk and fruit for breakfast.

You can also add cheese, peppers, onions, black olives, corn ... whatever you like. When adding the vegetables, be sure and rinse then dry them so they'll bake into the cornbread.
